- Origin: Italy; Abruzzo and Marche.The summer truffle, or "scorzone" in Italian, has a fine and mild scent of underbrush and a delicate flavour of forest wild mushroom.Underneath its black skin is hidden a yellowish beige lining.
Black Winter Truffle: Tuber Melanosporum (Périgord Black Truffle)
Season: Early December - Late March.Origin: France, Italy, Spain, New Zealand and Australia.On the outside, it is dotted with small protuberances and its flesh is black and riddled with very fine white venules. White Truffle: Tuber Magnatum Pico (White Truffle from Piedmont or Alba)
Beginning of October - End of DecemberOrigin: Croatia, Italy (Piedmont, Lombardy, Tuscany, Marche: Acqualagna, Veneto and Molise).Its intense fragrance has a subtle garlic scent. Its skin is relatively smooth and with a brownish-white appearance.
