• Use: It accompanies your cheese platters (cow, goat or sheep cheeses) and goes perfectly with foie gras, fresh or seared. It can be used to glaze cockerels or to caramelize chicken breast and duck. It is a perfect accompaniment to cheese soufflés, or braised asparagus with pecorino. It goes very nice on vinaigrettes as well.
